Abstract
Allergy is a model of environmental disease. To live in harmony with the substances normally present in our ecosystem, our immune system develops tolerance processes, whether with the saprophytic flora that covers the interfaces between our organisms, or with the microbiological particles present in the air we breathe, such as pollens and the foods we need for our nutrition.
